White Chili Recipe

After we had our last baby, our kind friends brought over lots of delicious food. Kimber made white chili, and that was the first time i'd ever tasted it in my life! Wow, i had been missing out. I love this dish! I think it tastes best cooked in the crock pot:

1 whole chicken
6 c. homemade broth
3/4 tsp. salt
2 tsp. basil
2 tsp. cumin
1 tsp. oregano
1/2 tsp. cayenne
1 tsp. pepper
1 onion
1 can navy or pinto beans, drained
7 oz. green chilies
sour cream
monterey jack and/or cheddar cheese
avacados
tortilla chips

Cook the chicken several hours in water with onion, celery, garlic and salt. Strain everything out and reserve the broth (i usually keep this broth in my freezer so i don't have to do all the work in one day). Cut up the cooked chicken and add it back to the broth in a crock pot.

Cut up the onion and add it, along with the spices, to the pot. Cook on low setting for 3-4 hours.

About 20 minutes before serving, add the canned beans and chilies.

Just before serving, turn off the heat and add as much sour cream as you like.

Serve with cheeses, avacados and tortilla chips.
